Lava cake is the dessert that made pizza chains take dessert seriously. The trick is deliberate underbaking — the outer cake sets while the centre stays liquid, so cutting into it releases a flow of warm chocolate. It's a genuinely clever bit of production engineering, since it has to work identically in thousands of kitchens with varying oven conditions.
They arrive as a pair in a small container, and they're smaller than most people expect. That's appropriate; the intensity means a single one is enough for most people after pizza.
Timing is everything
This is the most time-sensitive item on any pizza menu. The molten centre stays molten for maybe fifteen or twenty minutes after leaving the oven. Beyond that it sets and you have a small, dense chocolate cake — still perfectly nice, but not what you ordered.
For carryout, eat them in the car if you're honest about it. For delivery, there's a reasonable chance they'll have set by arrival. Fifteen seconds in a microwave brings the centre back, though it's never quite as good as fresh.
Ordering notes
Ask for them to be added at the end of the make line rather than the start. Some stores will accommodate this, which means they come out of the oven closer to when the driver leaves. It's a small thing that makes a real difference.
Two cakes is the standard portion and it's right for two people. For a group of four, order two portions rather than trying to split — these don't divide neatly.
Nutrition
Around 350 calories per cake, most of it from sugar and fat. As desserts go that's moderate — a slice of cheesecake would be considerably more — but the pair together is a substantial addition to a meal that was already substantial.
